Proof66 Notes

Dolin Rouge Vermouth is one of their flagship products produced for well over 150 years. It is made from a base of 100% ugni blanc grapes, a white wine grape often used for cognac. It is blended with 17 herbs from the local mountains. They recommend it, of course, for a classic Manhattan cocktail.

MaisonDolin was founded in 1815 by then 25 year old Joseph Chavasse in Mont Blanc. Here, he felt that the herbs he needed could be found in his "alpine garden." He first began producing vermouth in 1821. The name Dolin comes from the in-law Ferdinand Dolin who married Marie Rosalie Chavasse and later named the company for himself. Eventually, the distillery was sold to Charles and Joseph Sevez of Chambery, who kept the name and the recipes intact. It moved to its present location in 1975. It remains independently run and operated to this day.

finally, here in PA. we can buy it at the state-run stores with out having to special-order 6 bottles at a time, as the case was, prior. it's a step up from M&R and about twice the cost ... not sure it's worth the extra money unless you're sipping it straight or making a vermouth-heavy/forward cocktail. it IS good with rye or bourbon but my feeling is that M&R is good enough at much less cost .

IMHO, this blends together much nicer in a rye/bourbon Manhattan than M&R. The spices are more subtle. This also serves well in a Negroni. My only issue is it costs more than twice the price of M&R and is much harder to find in my area.

Excellent in a Manhattan. Light and flavorful. Handles both bold 100% ryes (either old or young, from WhistlePig to Catoctin Creek) and mellower ryes (Russells, Michters etc) with ease. Is it Carpano? No, it doesnt have the flavor of Antica. But it also wont overwhelm a Manhattan either.
