Proof66 Notes

1512 Signature Poitin is named for the famous (notorious?) un-aged white whiskey of Ireland: sometimes known as "poteen." However, rather than being made from a base of grain (which would make it a whiskey) it is made from a base of potato, which might inspire some to think "vodka." (Geek note: in order to qualify as "vodka," the liquor must be distilled to 190 proof before dilution, which means the great majority of congeners--ie, flavors--are stripped out; we presume the Poitin is diluted to a far lesser strength so will retain more of the character of the potato just like a traditional moonshine would retain more of the grain character.) It's bottled at a hot 104 proof. We have opted to list it as an exotic, unto-itself category in spite of the potato base to group it with its most likely peer group.

1512 Spirits was founded in 2011 in Sonoma, California by Salvatore Cimino. According to a write-up in the San Francisco Bay Guardian, the name comes from the address of Cimino's other profession as a barber (at 1512 Pine Street). They produce spirits by traditionally-fired pot still in small batches. A complimentary write-up at the Whisky Wall described Cimino's effort as "intense" and "dedicated," including grinding his own grain by hand and was trained in distilling by both his father and grandfather.
