Proof66 Notes

The Georgia Distilling Company is located outside of Milledgeville, Georgia. From the write-up The Telegraph (Linda S Morris), it was founded by Bill Mauldin and Shawn Hall and opened in 2013, where they do brisk business for their own labels as well as some private label contract work.

Copperhead Georgia Sour mash is an interesting blend of what we would think of whiskey and rum. It takes a base of 50% corn grain (the base of all corn whiskey and the greater part of bourbon) and 50% sugar cane (the base for rum or, specifically the sugar cane juice, rhum agricole). The spirit is aged for a brief period of time in smaller oak barrels (the smaller barrels accelerating the aging process) and bottled at 80 proof. The "sour mash" likely refers to the yeast used in fermentation... the same yeast retained from batch to batch is called "sour." From the picture on the label, the Copperhead must refer to the copperhead rattlesnake.
