Edward III absinthe is a self-described modern and New York-take on the classic European spirit. It uses a blend of 9 botanicals with dominant notes of anise, cinnamon, and lemon balm. The product was founded and run by partners Mark Maurice and Edward Jahn of New York. The absinthe is in the bleu or blanche style meaning it is clear rather than the dark green often associated with "verte" absinthe.

Formerly made at Tuthilltown Spirits, Edward III Absinthe was re-formulated and re-launched in 2010 using Flag Hill Winery and Distillery to produce.
