Glendalough Premium Poitin (pronounced "potch - EEN") is an un-aged whiskey that Americans would immediately identify as moonshine... in this case bottled at a striking 120 proof. To the distillers in Ireland, it represents the earliest style of whiskey made in isles as far back as the sixth century. It is made from a base of both sugar beets and malted barley. The former is a base often found in rums and sweeter spirits while malted barley forms the what we today know as classic single malt whiskeys. The mountain strength should test the most stalwart and the producers encourage one to drink it with (at least) a drop of water. According to the detailed write-up at the Irish Examiner (Trish Dromey), the poitin is made in collaboration with a local, unnamed distillery (West Cork Distillers?).

Glendalough Distillery was opened as an independent craft distillery to "recapture Ireland's lost heritage of great spirit production." It is named for the beautiful Glendalough Valley, which translates as "the glen of two lakes" and named for a valley in Ireland. The labels feature St. Kevin of the 6th century, who lived in a cave in the valley. Legend has it that he was so still a blackbird nested in his hand. It was founded in 2011 by Donal O'Gallachoir, Brian Fagan, Barry Gallagher, Kevin Keenan, and Gary McLoughlin.
