Liquor Review Notes:
Guapiara cachacas trace their heritage to the farmer Jose Junqueira in 1893. It is produced today in the state of Minas Gerais, Brazil at the Guapiara farm that they describe as "one of the beautiful mineral water stations of this country." They pay strict attention to the maturity pH level of the soil during sugar cane harvest believing that this provides for optimal sucrose level and reduction in methanol production (a highly distasteful and undesirable part of the distillate as opposed to ethanol, which is what we all want).
Guapiara Prata("silver") cachaca is aged briefly in Jequetiba wood which they say "imparts a unique flavor and bouquet" to the cachaca.
