Proof66 Notes

Pernod is one of the classic names in the history of spirits and is properly pronounced with a silent French "d"... [pear-NO']. Pernod claims that the history stretches back 7,000 years where the Book of Genesis mentions an anise elixir to remedy sickness.

My appreciation of the new (which means the old recipe) is higher than other reviewers. After a few days of being opened, the taste had improved. I noticed no artifical smell and the aroma and taste were quite good. I like this absinthe and think it good that Pernod absinthe is now a real choice who love their absinthe.

This is bottom-of-the-barrel absinthe, if you'll pardon the pun. It has a terribly astringent, artificial smell, none of the fruits and anise that should be tickling your nose. The color is off-putting as well; a sick pale yellow that stays a sick pale yellow as it louches under the cube. With the amount of artificial coloring added to this gasoline I'm surprised the lab techs weren't able to concoct a more desirable color. Sugar and water do nothing to help this thorn become a rose. A distinct oily chemical flavor coats the tongue, much like plastic bottle hobo vodka. I used to keep a bottle around for mixing, but truthfully, Pernod's not even worth that. Please don't be fooled by their claims of authenticity, it's either pure marketing BS, or they've been making a shitty drink for over 200 years.

As an every day absinthe, it's good. I find it lacks the qualities that would make it world class, but still a very drinkable brand.

Pleasant enough, reasonably complex. One of the best mass produced absinthes out there at present. Price is fair - about the midpoint range with everyone else on the market (especially for the relatively high proof).

Only complaint/observation would be I had higher expectations for what should be the benchmark if not gold standard of absinthe. It's good but not outstanding. A solid choice in a absinthe and a historical one too.
