Pierde Almas mezcal is a production of small-batch mezcal made in southern Oaxaca. They use traditional stone ovens and bake their various agave for 10 days before crushing them under horse-drawn stone wheels. These distill in a wood-burning copper still, which generates the smoky flavor that mezcal is so frequently known for.
