1911 Gin is made from a base of apples, surpassing rare in the gin world where the almost all gins are made from some sort of grain. It uses what they call "traditional botanicals" (suggesting a juniper forward mix) along with citrus and coriander for a light modern note. They also note they use a lighter infusion to let the quality of their apple spirit shine through.

1911 Spirits began life as the Beak & Skiff Apple Orchard in upstate New York, which led to hard cider, and naturally led to distilled spirits. The Beaks were dairy farmers and the Skiffs were potato and onion farmers. They planted their first apple trees in 1911 as a joint venture between Andrew Beak and George Skiff. After many decades as wholesale and U-pick, they opened a retail outlet in 1975. It grew to cider in 1979, which they later began to ferment in 2001 along with producing an apple wine. They moved into the spirits business with an eau-de-vie, vodka, and apple brandy in 2009 under the name Beak & Skiff Distillery. Believing that this was a poor marketing name, they re-branded as "1911 Spirits" in 2013. They believe the soil in the New York area gives their apples a unique "especially firm, crisp, and flavorful." Distillation of apples is a significant departure from most spirits made from grain and more in the style of European eau-de-vie and brandy.
