Forty Spotted Gin is a tradition, London-dry styled gin with the addition of Tasmanian pepperberry for distinctive flair and kick. The name comes from the Tasmanian Forty Spotted Pardalote. The gin is bottled at a relatively mild 80 proof.

Lark Distillery was founded in 1992 by Bill Lark, who lends his name to the company. They produce spirits with two, smaller sized copper pot stills in traditional batch methods. The company was founded on the principle of making whisky but branched into other spirits.
