Proof66 Notes

Four Pillars Rare Dry Gin declares itself both a "classic gin" and a "truly modern Australian gin," which is a bit puzzling to classify but we have opted for "traditional dry." They use a botanical infusion of juniper, whole orange (as opposed to zest), cardamon, Tasmanian pepperberry, and lemon myrtle, the latter two being unusual and indigenous to Australia.

Four Pillars Distillery is located in the Yarra Valley of Australia distilling in batch method in their copper pot still "Wilma."
