Gilpin's Westmorland gin is produced as an "extra dry" style using botanicals of juniper (naturally), sage, coriander, angelica, citrus, and—something unusual—"borage." Borage, we see, is also known as "starflower" and is said to taste a bit like cucumber. The citrus and cucumber suggests more modern notes for the gin but we have opted to defer to the producer and list it as a traditional dry. Gilpin's also claims to use spring water "filtered through willow peat" for a defined flavor note (we have no idea what "willow peat"). The gin is bottled at an appropriate cocktail strength of 94 proof, perfect for Martini enthusiasts. Various sources note the producer is Thames Distillers of London. The label is owned by Westmorland Spirits, founded in 2010 by Matthew Gilpin.

The gin is named for Sir Richard de Gilpin who, according to legend, fought a wild boar in Westmorland in 1207 and was granted the wild boar for his symbol... the Gilpin family later became involved in gin production in Holland. The boar graces the label on the Gilpin's gin bottle.
