Peach Street Distillers is a micro-distillery in Colorado created om 2005 by three friends (Rory Donovan, Dave Thibodeau, and Bill Graham) who claim to have founded in Colorado in order take advantage of the local fresh fruit. They believe the elevation and sunlight creates a "special concentration of sugars" in the fruit.
Jackelope Gin is named for the semi-mythical Colorado creature said to live among the juniper. With the signature juniper infused with their flagship vodka, they add coriander, angelica, oris root, licorice, lemon zest, and cassia for a traditional dry gin.
