Joseph Cartron uses the black Chalonnaise cherry for body and the sour Montmorency cherry for acidity harvesting both from Burgundy, France. They macerate (that is, steep) the cherries in pure alcohol in separate vats for 4 to 5 weeks and then blended with sugar and decanted. They suggest using in a Kir Royal:
