Batiste Rum or Rhum is a silver style of rum made with sugar cane juice in the French style. In an interesting process, they make a base distillation in France with a "non-GMO" and "fair trade" sugar cane. That product is then shipped to California for a "polishing," which involves a second distillation with a Japanes Yabuta still. The final product is meant to e flavorful with absolutely no additives or aging (many rums are sweetened or aged and then filtered to improve flavor). We're told its mean to aim in the "super premium" market for those individuals seeking particular production methods.

Bellevue prides itself on being a carbon negative operation in that it produces more energy than it uses based upon a combination of solar panels and re-using waste biomass. They also create their own topsoil through a composting system. They distill in the tradition of French rhum agricole using sugar cane juice rather than molasses. They immediately ferment their sugar within an hour of "grinding" to preserve flavor and create a 5%-6% "wine" to distill. They distill to 156 proof, implying a slightly more neutral spirit than other, more robust flavors that come out at lower distillations. Want to see the production facility in action?
