Proof66 Notes

The Bayou rums are made from a base of both molasses (traditional) and raw sugar (unusual and more in keeping with the French rhum agricole style or the Brazilian cachaca). To us, this implies a blending of the deep, robust syrup flavors of molasses with the more earth, greener tones of rhum agricole. The molasses and sugar are both sourced from Louisiana. The Bayou silver expression represents a smooth, classic profile that they recommend in Mojito or Daiquiri cocktails. 

Louisiana Distillery is located in Lacassine, Louisiana with an emphasis on making rum, which they mention has a long tradition in Louisiana reaching back to 1751 with Jesuits making a style of sugar cane spirit. The distillery is owned by Tim Litel, Trey Litel, and Skip Cortese. They describe themselves as being the largest privately owned distillery in the USA (at least as of 2013).

I've had a chance to try all the rums being made in Louisiana and this by far the one that is hardest to drink. I visited their beautiful distillery on a trip out to Lake Charles, but the product doesn't live up to the distillery.

Unfortunately, this rum disappointed. Overly sweet to the point it tasted like artificial sweeteners had been added. A lot of money spent promoting this brand and it didn't live up to the hype.

I live in south Louisiana and have occasionally driven by this new distillery during construction. I was looking forward to trying their products, more out of curiosity than anything, but didn't get my hopes up. I didn't realize that they had even begun selling their rum until the other day when I saw a bottle at my usual liquor store. It's outstanding - period. It's definitely on the sweet side - not a dry rum, but this is exactly what I always thought rum SHOULD taste like. It conjures up images of sugar cane fields and hot steamy days on the Mississippi River. The daiquiris that I made with this were LEGEN- wait for it... DARY! I think it's only available in Louisiana as of now, so the rest of the world finally has a reason to be jealous. If you see it, try it.
