Proof66 Notes

Cane & Abe Freshwater rum is a Madison, WI product made from a base of brown cane-sugar. It is distilled in a traditional copper-pot still (itself made in the Ozarks) and aged in small, 5-gallon "heavily-charred oak barrels, which impart a deep amber color. The smallness of the barrels promotes more contact with the liquor, which accelerates the aging process. As such, the aging of the rum is considered complete in about 4 months.

The "cane" in Cane & Abe refers, no doubt to the sugar cane base but the "Abe" is a tribute to Old Abe, who was a bald eagle and a mascot of the Wisconsin's 8th Infantry in the American Civil War.

In our own tasting of Cane & Abe rum we said, "There's a gravitas it lends to the drink: it makes the sweet a heavier, more bass-like note; it gives the sour a brass section depth; and it definitely, definitely adds some character to the story of the cocktail overall. Anyone can have Bacardi in their cocktail just like anyone can hum a few bars of Beethoven's Ode to Joy. It's a little something extra to be able to riff the Ode to Joy on an electric guitar plugged into a pawn store amp at 2:00am in the morning for your buddies on the back lawn."

About the Producer:

The Old Sugar Distillery was originally founded as Spirits of Madison and later the Old Sugar Factory. The company was launched by Nathan Greenawalt in 2010, who eventually relocated to Madison that same year and took the name in honor of the US Sugar Company, which operated in Madison from 1906 to 1924 rendering sugar beets into sugar.

Good flavor and drinkability for this reasonably priced rum. Silty appearance with a pleasant after taste. A step up from the well drink products.

All things considered - quality, price, size of the distillery - this is an amazing rum and one that you must include in your bar.

I was really impressed with this. For a very small distillery, they make a good product. I would buy this.

Very unique rum. You can taste the sugar and the barrels that were used. Adds its own character to all the drinks it was mixed in.

Though not usually a Rum drinker this one hit the mark in the very first sip, the color , the haziness, the sweetness all of the key factors. Looks like the Wisconsin freshwater only made things better For a distillery of its size this rum was very nice. I would strongly recommend it
