Cerritos tequila was founded by Antonio Cordova and distinguishes itself by using charcoal made from French oak to filter the tequila in a process very similar to that pioneered by Russian vodka. This filtration is meant to remove impurities and produce a cleaner tasting spirit. The label is named for Cerritos Beach in Baja California (he also owns the Cerritos Beach Club & Surf). 
Cerritos Blanco tequila is their aged expression, meaning it will have rested in oak for at least 1 year prior to bottling. 
The 2013 Beverage Testing Institute suggested the Cerritos Anejo as a digestif or paired with dessert.
