Comb Vodka Distilled From Honey
This is a Tier 1 score in the Vodka category. It means the spirit has won the highest recommendation at least once and probably many times.
StilltheOne Distillery was recently launched in 2010 based upon the fermentation of small-batch honey imported from Florida. They believe the honey used as a base for their alcohols (rather than the more typical grain) lends a different flavor profile and aroma to the spirit. It was founded by Ed Tiedge--a former bond portfolio manager who left Corporate American in 2008--and he named the distillery in honor of his marriage to his wife, who is "still the one."
Comb vodka is named for its base ingredient for fermentation: honeycomb, which they import from Florida. They produce a honey wine that is then distilled. The result they consider so pure that there is no need for filtration.
In a descriptive review, the Beverage Testing Institute found aromas of "Asian pear, honeydew gelato, and baklava" in Comb Vodka and announced "A remarkably clever and deliciously flavorful vodka that will transform cocktails." They reiterated this position in 2011 citing aromas of "lovely floral honeycomb" and declaring it "Clever, should make for interesting cocktails."
