Cavanagh Spirit Drink is a style of Irish Whiskey though it escapes the actual designation of whiskey. It should not be confused with "poitin" (a kind of Irish moonshine) but is an aged, grain-spirit product. According to the interview with West Cork Distillers' John O'Connell from How to Drink Whiskey, it is a 3yr aged grain spirit that is then "steeped in malt" to add flavor followed by a Tennessee-whiskey style filtration through charcoal. Because of these additional two steps, what would normally have been a whiskey (albeit a young whiskey) becomes a "spirit drink." [Note: confusing matters, a "spirit whiskey" in the US is considered a blend of whiskey and vodka.] They call it an "august" and "challenging" drinking experience. We've opted to list this as a blended Irish whiskey simply to place it within a category of likely peers, knowing it doesn't exactly qualify.

West Cork Distillers was founded in 2008 and named for the town of West Cork, Ireland in which it resides. It was founded by John O'Connell, Gerard McCarthy, and Denis McCarthy who were all childhood friends who grew up in the fishing village of Union Hall near Cork. According to the write-up at the Independent I.E., they use a proprietary infusion technology that "gives their whiskey an older taste than its actual age."
