Proof66 Notes

Chambers Bay Greenhorn bourbon is a younger whiskey but fermented and distilled 100% on premises (a fact that they are proud of given the large number of whiskeys on the market acquired and then merely bottled on site). It appears to be us a "wheated bourbon" style with a grain bill of corn and wheat grain (most bourbons are blended with rye). More interesting, the bourbon is aged in the Puget sound on a boat where they feel the rocking of the waves improves the aging process while the salty air adds a sea-quality to the whiskey.

Chambers Bay Distillery was founded in 2012 by Jeff Robinette and Alan Davis with the specific goal of making whiskey.

Community Notes

Aged 16 - 22 months in small barrels, Greenhorn is a young expression of Chambers Bay Distillery's flagship wheated bourbon. The bourbon mash is fermented with a proprietary wild-yeast strain harvested from a local apple orchard. Harnessing the power of the sea, this bourbon is aged in a floating boathouse on Puget Sound. The wave and tidal movement created by the hydrokinetic energy expedites the aging process by increasing the interaction of the spirit and the wood. The sea also enhances the bourbon with a subtle note of sea salt.
