Proof66 Notes

Colonel EH Taylor Barrel Proof bourbon is offered right from the barrel--at heroically high proofs in excess of 125 (thus demanding a little ice and/or water)--uncut and unfiltered. It is the absolute unbridled taste of bourbon as if sipping from the barrel itself.

Colonel EH Taylor bourbon is named for Edmund Haynes Taylor, Jr who had a particular method for sour mash bourbon. It is a line of bourbons originating from the Buffalo Trace Distillery and owned by Sazerac.

One doesn't often think of buffalo in Kentucky but the distillery takes its name from the buffalo path (or "trace") that led to the banks of the Kentucky River in Franklin County. Buffalo Trace Distillery takes pride in the limestone water (being notably free of iron) and good soil conditions for grain. The site has had a working distillery since 1787 but the official Buffalo Trace first began operation in 1857. It obtained one of only four permits offered during Prohibition to maintain production for "medicinal purposes." Today, the distillery sits on a picturesque 119 acres and produces several labels of bourbon. Buffalo Trace was named Distillery of the Year by the 2008 San Francisco World Spirits Competition. It was named a national historic landmark in 2013./p>

This is currently my #2 bourbon behind Booker's. The price point is a little steep - if it were around $50 I would always make sure I had it stocked in my bar. The aroma almost forces you to visualize standing in the middle of the warehouse surrounded by quietly aging bourbon. The flavor profile is full, robust, and perfectly balanced. Dropping a couple ice cubes in your glass or giving it a splash of water will help bring the proof back down to a level where you can enjoy more than a couple.

I opted to try this one neat. Its got a nice flavor with a kick up front but a smooth finish. An ice cube or two with this one would balance it out nicely.

With the Buffalo Trace whiskeys becoming more and more scarce as their star ascends, the Colonel EH Taylor may represent the next burst of available leading to hard-to-find whiskey. The barrel proof, with a little water, explodes in those flavors that the bourbon enthusiast most enjoys. Can't find Pappy? Can't find Handy? Can't find Blanton's? Turn here and savor.
