Proof66 Notes

Downslope Distilling Double Diamond Whiskey is a blend of predominantly malted barley grain with the addition of rye. They suggest the flavor profile is similar to an Irish whiskey with an additional spicy kick from the rye. Here at Proof66, we're told by the distiller that the whiskey undergoes very specific aging processes. This includes a solera aging method in wine barrels--"solera" meaning a blend of older and younger or new spirits (we always think of solera aging kind of like filling your gas tank: there's always a bit of "older" gas in any tank though obviously the distiller is far more precise). The "marriage" of whiskey is aged for between 3 and 6 months before transfer to a small, medium-char American oak barrel for an additional 3 months. We're further told that the temperature variation is 20 degrees per day (promoting increased contact and "breathing" with the wood) and humidity between 15% and 45%.

In the 2013 Jim Murray Whiskey Bible, Double Diamond received 89 points noting: "…a fabulous degree of complexity and depth."
