The Glenlivet 21yr single malt scotch is the second-oldest expression from the distillery. It is considered an "archive" whisky, meaning it is selected from specific barrels kept in a special portion of the warehouse. It is part of the sherry cask range, with a portion (we're told roughly 18%-20%) of the whisky aged in sherry casks and the remainder in American White Oak. They describe it as having a more emphatic sherry note and strongly caution against adding too much water, which can wash out the sherry and leave a woody and lesser scotch.

The Glenlivet Distillery (note the use of the indefinite article "the" allowed by court decree in 1884) is the top-selling single malt scotch in the world. It is often considered the classic Speyside, producing unpeated (that is, non-smoky) scotch whisky. The name translates as "valley of the smooth flowing one." They are proud of their mineral rich water from "Josie's well" and their tall copper stills, producing lighter vapors for smoother, more buoyant whisky. The brand is owned by French-based Pernod-Ricard.

The sherry cask finish has a nice influence here, but it's not overwhelming. It provides a perfect balance to the traditional "oak and smoke" that Glenlivet has perfected inside this bottle. If you get the opportunity to try this one, do not pass it up.

The sherry comes through with a mild nutty flavor accented with a butter toffee and slight sweetness. This is the oldest scotch I have had and as much as I enjoy the 15yr old Glenlivet I can't imagine that they could make any better than this no matter what the age. A rich and wonderfully enjoyable Scotch that is surprisingly easy to find.
