Suntory's Hibiki Japanese Blended whiskies were first launched in 1989 in honor of Suntory's 90th anniversary and is available in a variety of ages. The Hibiki 12yr whisky is aged for at least 12 years. Interestingly, some of the whisky is aged in Japanese plum liqueur barrels (umushu) similar to the tradition of finishing scotch in wine casks. The blend will include some whisky as old as 30 years.

Suntory Distilling was founded in 1899 by Shinjiro Torii beginning with the sale of grape wine. and today carry the tradition of "Yatte Minahare," which they translate as "go for it!" In 2003 they announced a philosophy of corporate citizenship. They operates two distilleries. The first was Yamazaki distillery was constructed in 1924 and produced its first "genuine" whisky in 1929. It today produces the single malt whiskies for Suntory in the style of single malt scotches. Hakushu was built in 1973 "at the foot of Mt Kaikomagatake." It gives its name to the larger Suntory Company, which owns massive operations and several lines of whisky, including the ownership of US bourbon and whiskey maker Beam.

3.7 pretty good for a blend but not very exciting and waaay overpriced. stick with the pure yamazakis and hakushus.

Like Japanese cuisine, Hibiki is complex without being heavy. Every time I drink it, I feel like I notice something new.

Most unique whiskey I've tried to date, has some serious fruit in the body but not sweet. It's good and it does expand my whiskey horizons but I don't need a bottle

Gave it as a gift to friend.  We promptly opened and enjoyed.  Started strong and finished very smooth.  Not much on the peat but very complex.  One of the best I've had.

I am not a scotch connoisseur, but this is one of my favorite scotches. Lightly peaty with a very subtle undertone of fruit (plum in this case).

This is a hugely interesting whisky. It's very, very pale for 12yrs. I didn't know about the umushu finish when I first smelled and tasted it and thought it had a strong scent and taste of sherry. But now that I read about the plums, I can verify it makes for a truly interesting and unique taste.

It's a spicy whisky with just a faint trace of peat and such a flavor of fruit that it almost tastes like a cognac. In fact, I like it better neat than any other method. But I couldn't resist and tried it in a Manhattan recipe in place of rye--excellent. Maybe a bad use for a $60 whisky but a great experiment.
