Proof66 Notes

High West Silver is a line of un-aged whiskey ("moonshine," if you insist). The High West Silver Oat Light Whiskey is an un-aged whiskey (or "moonshine," if you like). The grain bill is made from 15% malted barley and 85% oat (unusual!). It is similar to their Vodka 7,000' (it's also made from an oat-base) but distilled to a proof lower (176) than the required 190 to b classified as a vodka. This technically makes the spirit an un-aged whiskey, which will retain a greater flavor and aroma of the oats. They describe it as completely versatile in a wide range of cocktails calling for whiskey or even some vodka cocktails.

In our own tasting of the High West Silver Oat, we found that it tasted like "buttery oatmeal with a blast of something" and that mixing it "turns vodka cocktails into something whiskey drinkers will actually like." We highly recommend it for those exploring for new kinds of flavor profiles beyond the ordinary.

The 2012 Wine Enthusiast review found significant cherry notes and suggested serving in a Manhattan cocktail with extra cherries.

About the Producer:

High West Distillery is proud of both its small status and its western roots. It is currently restoring a 100 year-old livery stable as its future home and the horseshoes in the logo are meant to honor that tradition. In Utah, they are at an altitude of 7,000 feet in the Rockies. They hope that by enjoying their product the consumer is celebrating their "gumption" at bringing spirits back to Utah.
