Highspire Pure Rye whiskey is based upon a recipe from the19th century recipe made by an Irish immigrant named Robert Wilson. The modern version was brought to market by Austin Hope, made to the specifications of 100% unmalted Ryman rye grain (many rye whiskeys are blended with other grain) grown in Kentucky. It is aged not in new charred oak or ex-bourbon barrels (very common and traditional in the industry) but in California wine barrels, which introduces different flavors to the whiskey.
