Proof66 Notes

Jim Beam Devil's Cut Bourbon was first launched in 2011. They describe the "devil's cut" as the bourbon that is left inside the wood of the barrel after it is emptied for bottling. They use an extraction process to get that bourbon out of the barrel and then blend it with 6yr bourbon (the flagship white label is aged 4 years).

Jim Beam Devil's Cut is good, but little overpriced. The nose is spice, oak, and honey. The entry smooth with palate of oak & spice with finish of honey, spice, oak, pipe tobacco with of citrus. It reminds me of Ezra Brooks 90 proof with similar taste and quality. Ezra Brooks 90 proof is half the price of Jim Beam Devil Cut..

Pretty Good Bourbon, Excellent job of marketing this and its not at all a bad idea to steam out the barrel and get all the good vanilla rich juice out of the wood. This is basically very much like "Jim Beam Black" with some extra flavor coaxed from the barrel. When you visit your liquor store you may notice this will most likely not be located between the Jim Beam Single barrel and Knob Creek, but nestled next to the Honey, Cinnamon, and Apple flavored Beam Whiskeys. That should tell you who is buying it. For the taste? =to me its so similar to Jim Beam Black, that I will not duplicate those comments here.

It makes sense that this is partially made from 6 year old Beam because my impression of this is that its halfway between the White Label (4 years old) and my bottle of Beam Black (which is 8 years old rather than the new NAS "Extra Aged" version). The flavor of Devil's Cut and Beam Black is very similar: pleasantly sweet, noticeable wood with a strong char note balanced with a noticeable but not super strong rye kick (in other words a good, though typical bourbon all around). The only difference flavor-wise is that the Black Label is maybe a hair sweeter. The family resemblance to the White Label is in the fire. Devil's cut tastes like the Black Label but it burns more like the White Label. It's not QUITE as harsh as the White Label but its close. Since its very close to the Black Label in terms of taste, midway between the Black and White labels in terms of price, and burns slightly less than the White Label even though its got 5% more alcohol (also 2% more than the Black Label), for me this works out to a rating roughly equal to the Black Label. I'd totally order this in a bar, and would totally do a bottle buy if it were on sale. This is a good buy for anyone who likes the Beam White label (though frankly, few bourbons will disappoint you if you can actually enjoy Beam White label), and its also worth trying for fans of Beam Black, or most other mid shelf bourbons. 4 out of 5 stars.

Great bourbon a giant steep forward from the horrible white lábil and the weak extra aged, sweet nose with caramel, vainilla, Spice and toasted oak, bitter flavour, dried fruits, long finnish with oak and Spice, a real bang for the buck.

Had been wanting to try this one for a while. Wasn't expecting much. Got surprised. Caramel, toffee, oak and old leather on the nose. Enters with a nice subtle sweet and a heavy wallop of oak. A hint of dry roast peanuts. Of course it's heavy on the oak, but it's more complex than I expected. Nice peppery burn on the finish, leaving an earthy oak on the palate. A solid 3 stars Neat. Where this one earns its keep is on the rocks. With a little ice melt it becomes almost honey butter sweet in both taste and texture. The oak hangs around in the background. Short sweet finish, with limited to no burn. Leaves a nice sweet coating on the palate. A 5 star on the rocks. Average them out for a 4. I was tempted to give this one a 5, but just don't enjoy it near enough neat, but... Come home from work hot and tired, fill a small rocks glass with ice and Devils Cut, let it sit a minute, then enjoy a great bourbon.

Love this bourbon! Took a shot at party last year and fell in love! Better than white label. Must have in my bar!

Not the best bourbon i had but pretty decent one. Has good nose of apples, vanilla and oak. In the mouth you get more Oakiness with peppery and bitter finish. Kinda weird to say this in a bourbon but has bit of an element that reminds me of scotch. In conclusion, this is more of mixing or drinking-on-the-rocks bourbon that something you savor neat.

I would give this a 4.5 star if possible. Very good. Great oak profile. I agree that the oak dominates and even overrides other flavors. I still like it a lot. Big fan of the oak. Better than Beam Black. Has more character and depth. Good bourbon at good price.

Ive tried this neat, with a splash, and on the rocks. Sorry, but neat this has way too much burn and way little flavor. A splash tames the fire a little but to me brings out an off/sour note? On the rocks it picks up an interesting sweetness, but the burn and smoke are still there without much real flavor to back it up. I cant say I really enjoyed it.

Big robust wood notes. Medium body. Hmmm... Earthy but not peat. Peppery. Smooth though. Medium finish. A solid whiskey but very one dimensional. I would recommend it.

I went in fully expecting this to be too oak-y, but really was just right for me. A definite improvement from the standard Beam offering.

My gut says 2, but I'm giving it a 3 because I'm pretty sure my prejudice against anything with "Jim Beam" written on the label probably soured my opinion of it slightly. This is fairly cheap, though, and I'd probably recommend it to someone who wants to move up the bourbon ladder from regular Jim Beam.

Probably not for those who don't love oakiness. Has a sour/astringent note from the extra oak some would find it off putting. I think the other flavors are prominent enough to keep that in check. Good price.

Maybe it's just my palate, but I get nothing from this but young, watery background flavors being overpowered by bitter charcoal so heavy I swear I can feel the grit in my teeth. I drank the whole bottle in a week trying to convince myself I hadn't just wasted a month's bourbon budget, but I failed. I'd be better off chewing on a burnt stick while drinking grain alcohol.

I haven't been a big fan of the Beam products thus far. I don't dislike them, I'm just not crazy about them. 3.5 stars is probably more accurate for Devil's Cut. This wasn't as harsh as I anticipated. It's fairly priced and worth trying at least once.

I agree, nothing special. It's actually good on the tongue and in the throat, but the aftertaste is bitter and longlasting. The aftertaste actually reminds me of the funk that I taste in several of the Beam labels (including Makers Mark). In my honest opinion, Jim Beam's regular bourbon is better than Devil's Cut.

To me it was nothing special, just a stronger, bitey beam. Decent midshelfer bourbon.

I was rather pleasantly surprised by this. Other reviewers mentioned tasting a little harsh, which is what I expected as well. I found it almost sweet. The wood flavor wasn't overpowering. More like a really, REALLY light scotch. That said... except for the kinda cool advertising going on around the term Devil's Cut, there's not a lot going on here. Its not very distinct. I won't be rushing out to buy another bottle when this one is finished, nor do I intend to make it a regular selection in my liquor cabinet. But I might pick it up again from time to time.

Its not suppose to be smooth. Thats why its called the Devils Cut. Anyway, I had some on the rocks last Halloween. Surprisingly good flavor. Very nice aroma. This will make a very fine Halloween tradition every year!

It is strong neat.  The smell is powerful.  The taste strong.  Lingers on the sides of your tongue and back of your mouth.  Adding a little water evens it out and makes it more pleasant.  Only add a little water.

Great nose -- apple, vanilla, brown sugar. Taste still comes off a little hot -- which is my complaint about Jim Beam -- but this is so rich and complex the heat doesn't kill it. Very well done.

A buddy brought a bottle of this the other day. It is a bit ragged as a shot or sipping straight up. Throw in a large ice cube and it mellows quite a bit and is not bad. Worth a try overall.

The heavier charcoal notes are interesting and pleasant. The problem is that the base whiskey is young and "ragged". At a better price, Id have given 3 stars, but not for the same price as 1792 locally.
