West Cork 10yr Single Malt is the premium expression is aged for a minimum of 10 years in ex-bourbon "first fill" casks, meaning that this is the first time anything but bourbon has been placed in the barrel and tends to suggest a richer, oak-driven vanilla/caramel flavor. The whiskey is blended down to 80 proff but is not chill-filtered, suggesting a more viscous mouthfeel appealing to some purists. The press release mentions a rediscovered Irish "repasse" process that intensifies the flavor of the grain.
