Proof66 Notes

Kikori Whiskey is made from a base of 100% rice, which makes it somewhat doubtful as a true whiskey (which is almost universally defined as grain-based) but rather a style of shochu (which is how we've classified it on Proof66). It is aged for at least 3 years in a combination of American and European Oak and ex-sherry casks, a style of aging familiar in the scotch whisky world. The rice and water are both found in the volcanic regions of Japan, where they find the purity of the water and the terroir of the land gives the spirit a unique taste.
