Proof66 Notes

La Fee Parisienne absinthe is the traditional, classic French recipe. It should be served neat in a clear glass with icy cold water slowly dripped or poured into the liquid, releasing hazy, clouds and diluting the overall drink to something drinkable.

La Fee absinthes were founded by George Rowley and considers themselves the first absinthes legally made with the traditional grand wormwood since the 1915 ban was lifted.

Decently made, nicely complex. A touch minty for our personal taste and the color is a bit too much to be totally natural (but would speak to authenticity for the period). All minor details. Overall, we liked this one. Complex, relatively balanced, easy to drink.
