Proof66 Notes

Barr Hill gin carries with it the traditional (and, in order to qualify as gin, required) juniper berry note but it also carries with it a floral character plus the unusual step of a slight sweetening with honey. In fact, there's a little bee on the label to clue the consumer in. The Tom Cat expression is aged in oak for between 4 and 6 months prior to bottling, giving it a light color and barrel-influence in the flavors.
