Gilpin's Westmorland gin is produced as an "extra dry" style using botanicals of juniper (naturally), sage, coriander, angelica, citrus, and—something unusual—"borage." Borage, we see, is also known as "starflower" and is said to taste a bit like cucumber. The citrus and cucumber suggests more modern notes for the gin but we have opted to defer to the producer and list it as a traditional dry. Gilpin's also claims to use spring water "filtered through willow peat" for a defined flavor note (we have no idea what "willow peat").
