Green Hat gin is named for George Cassiday who was known for selling bootlegged liquor to congressmen in Washington DC during the 1920s. He was arrested while wearing his "signature green felt hat." The gin itself is made from a base of winter wheat (a style of spirit familiar to French and Russian vodkas) and given a vapor infusion in a traditional copper pot still. It is chill-filtered for a lighter-bodied character and bottled at a good 90.2 proof, presumably to withstand dilution in cocktails.
