Greenhook Ginsmiths Old Tom gin is meant to be true to the English recipes of the 18th century "gin craze." It uses "period" botanicals (including the signature juniper) but is also aged for 1 year in Oloroso sherry casks (a practice common with scotch but most aged gins use ex-bourbon barrels) that gives a light color and character to the spirit. It is bottled at a startling 101 proof (even cocktail strength gins tend to be in the mid-90 proof range). They suggest it for a Martinez or Old Fashioned cocktail.
