Proof66 Notes

Fortress Rum is made in honor of "New France" and the wars that raged as part of the "New World" (new, at least, to the Europeans who staked their claim) The particular fortress in mind is the Fortress of Louisbourg National Historic Site in Nova Scotia, Canada (the fortress itself rose and fell within the 18th century), where the barrels of rum are kept and aged. The seaside climate is thought to give a special character to the rum during the aging process. The rum is sourced from the Caribbean (where battle also raged in the 18th century).
