Kings County Bourbon is made from a base of 70% corn and 30% malted barley, a different style from many "high rye" bourbons on the market who balance the corn grain with rye and perhaps wheat. To us, this implies a sweeter profile reminiscent of Irish whiskey. The bourbon is aged for a year in 5-gallon barrels, considerably smaller than the traditional 53-gallon size, presumably to promote contact with the wood and hasten the flavor that comes with aging.
