Proof66 Notes

Redbreast Cask Strength is aged for 12 years and bottled without blending at a very high proof. This is done for the connoisseur who wants the absolute purest form of the Irish whiskey. It is perhaps the best (readily obtainable) example of traditional pure pot still Irish whiskey.

Light and buttery, with some muted spice, fruit, and nut flavors. Pretty nice stuff. Lots and lots of alcohol burn, though, even for its strong cask strength. I actually prefer the watered down version, which is quite surprising. Sipping this almost requires some ice or water, but really not sure why so much burn from this offering generally. All of the qualities of a nice Irish in the flavor, somewhat let down by the burn, particularly given the age and quality. The proof66 score also seems a tad high for this particular bottle. The price is about right- got my bottle for $60.

Even at cask strength, I found this to be a very enjoyable dram. Banana bread on the nose, oily pureed fruit on the palate. My favorite whiskey at present. Slainte!

After trying the 12 & wishing the flavors of light delicate irish whisky were a bit more bold and developed I decided that maybe this juice needed to come out at cask strength for me to really dig into the flavors... that would be a mistake. I've come to learn that irish whisky should be appreciated for it's lighter more delicate character notes. Like playing classical music I tried this neat so perhaps cutting it with some water might help bring more flavor out but neat it just didn't work the way great (imo) whisky's like Glenl Nadurra, Ard Cor, Booker's, & Laph Cask work. All of the above I treasure & love neat but this one I just couldn't work my way around... I have a bottle so perhaps time will change... I'll update if that is the case
